Add chicken breast strips, 2 Tablespoons lemon juice, and 2 Tablespoons olive oil to a bowl and mix. Allow to sit while you chop the vegetables.
Cut 2 carrots into round chips, cut chips in half if carrots are very large.
Cut 1 large red pepper into thin strips.
Chop 3 kale leaves.
Add 2 Tablespoons olive oil to a pan or walk and heat.
Add carrots and stir fry 3-5 minutes until they begin to brown. Remove from pan and add to a bowl.
Add red peppers and 2 Tablespoons water to the pan and stir fry for 3-5 minutes until the peppers begin to soften.
Remove peppers from pan and add to bowl with carrots.
Saute half of the chicken in the pan until browned and cooked through to 165F. Add to bowl with vegetables.
Stir fry the remaining chicken until browned and cooked through to 165F.
Add chicken and vegetables from bowl back to the pan and stir.
Add Kale and stir.
Add remaining 2 Tablespoons of lemon juice and stir.
Saute until Kale is wilted, and serve.
